Foxtail / Thinai Millet Idli- Healthy breakfast with Millets
Idlis are one of the common south Indian cuisines that everyone loves to have it at any time. Even other country people also prefer to taste it with delicious sambar. As idli make a healthy breakfast(dinner) and is easy to digest. Idli is a mixture of rice and urad dal. It is loaded with essential of amino acids, carbs, and protein.Give a makeover to regular idly by mixing some amount healthy Foxtail millet (Thinai ) to get more dietary fiber and vitamin B6, Folic acid and zinc. Foxtail Millet Idli is perfect breakfast option for pregnant women and kids.
Foxtail / Thinai Millet Idli
Ingredients required are
• Foxtail millet (Thinai) -1½ cup
• Parboiled rice – 1½ cup
• Whole Urad dal- 1 cup
• Fenugreek seeds – 2 tsp
• Carrot – 1 grated
• Finely chopped onion – ½ cup
• Finely chopped green chillies – 1 tbsp
• Finely chopped coriander as a handful
• Mustard seeds – ½ tsp
• Split Urad dal – ½ Tsp
• Ghee– 1tbsp
• Curry Leaves – 5-10 nos
• Salt as per taste

Preparation Time: 45 mins Cooking Time: 20 mins No. of. Serves: 5 – 6
Method to prepare Foxtail /Thinai Millet Idli Batter
1. In a bowl soak the whole Urad dal and fenugreek seeds with plenty of water
2. In another bowl, soak the Foxtail millet and parboiled rice in 4 cups of water. Let it soak for 5 – 6 hours
3. Now drain the water from Urad dal with fenugreek seeds and grind to a fine paste. And transfer to a big bowl .
4. Now strain all the water from the foxtail millet and parboiled rice, grind this to a fine batter
5. Now combine both Urad dal and rice with millet batter and mix well, adding salt. Add required amount of water if the batter is very thick
6. Then transfer the batter to a large container. It needs some resting time for fermentation over 8-10 hours or overnight, and the volume will increase to keep in a sizable container to prevent spilling.
7. Once the batter fermented, you can use it immediately to make idlis/dosa or place in the refrigerator immediately and use it within next 3-4days.
Method to prepare Foxtail Millet /Thinai Idlis
1. Take the required quantity of batter in a bowl for making idlis. It should not be too thick or too thin.
2. To make seasoning in a hot pan add oil, once heated add mustard seeds, split urad dal, onion, green chilis, grated carrot and little coriander, curry leaves sauté for 2 minutes
3. To make idlis, lightly grease the idli mould with ghee, in each mould pour half filled with batter. If you prefer you can make in mini idly mould too.Steam the idlis for around 12 minutes on medium flame. Open the idli pot/cooker after 10 minutes and using a spatula, unmould each idli cleanly.
4. Serve it hot with coconut, green or tomato chutney.
5. Enjoy a tasty and healthy meal with family.

Idli obvious a healthy option for breakfast. Great to know your version of it, though I mix Oats in batter but Ill definitely gonna try this.
