Ragi Aloo Paratha- Healthy Recipe with Finger Millets
The commonly known millet in our country is ragi, it is affordable for all kinds of the population. It holds a major place in Indian kitchen and it’s an ancient grain. It is also available in a form of flour and whole. It is enriched with energy, protein and loaded with minerals like calcium and iron. So, it is a wholesome, well balanced and tasty too from kids to older.

In this recipe ragi and potato combination makes a meal complete, the potato is an excellent source of energy and a good source of vitamin B&C. Ragi is good for women’s health because it has iron and suitable for vegetarians too. As ragi have the good amount of dietary fiber, it is a best for diabetic people to maintain their sugar levels and weight loss.So no need to worry about a little potato. Ragi is loaded with natural calcium, so it is good for bones and teeth. Coriander leaves are adding taste and filled with vitamin C and K, so it is good to lower bad cholesterol and improve digestion. Whole wheat flour will give a good dietary fiber. So the combination of all these makes it the best meal for any time a day. Very simple and quick method for working mothers to prepare during their busy schedule.


Ingredients required
• Ragi/Finger Millet Flour – 1 cup
• Whole Wheat Flour – 2 cups
• Boiled, peeled and mashed potatoes – 2 medium size
• Finely chopped green chili – 1 medium size
• Finely chopped Onion – 1 medium
• Finely chopped coriander – 1 cup
• Plain Curd – 1tbsp
• Garam Masala – 1 tsp
• Salt – for taste
• Vegetable Oil – to make parathas

Method
1. Take a bowl and add 1cup of ragi flour, 2cups of whole wheat flour and 1/1 teaspoon of salt for taste.
2. Then put 1tbsp of plain curd and add required amount of water to make like roti dough.
3. At the end add little oil and keep it aside for 15 minutes.
4. Meanwhile, make Aloo stuffing – in a hot pan, add oil followed by finely chopped green chili, onion and sauté for 2-5mins.
5. Add garam masala and salt as per taste
6. Now add boiled, peeled and mashed potato to the mixture and mix well. Finally, add finely chopped coriander
7. Once the stuffing is done, allow it to cool.
8. Take the dough and knead well to make it soft. Make a medium size ball and roll to small circle now take lemon size aloo mixture, keep in the center of the roti and cover it into a ball shape.
9. Now roll it without breaking the center.
10. In a Hot Tawa, cook both the side of Ragi Aloo Parathas evenly by adding little oil/ghee on both the sides.
11. Cook in a medium heat, as ragi will need some extra time to cook.
12. Serve hot Ragi Aloo Paratha with cucumber raita or with green chutney.
